1 spaghetti squash halfed lengthwise and seeded ▢2 TB vegetable oil ▢1 tsp minced garlic ▢1 1/2 cups chopped tomatoes ▢3/4 cup crumbled feta cheese ▢3 TB sliced black olives ▢2 TB fresh basil chopped


Step - 1

Grate the oven to 350 degrees.  

Spread spaghetti squash, cut sides down, on a baking sheet that has been gently greased. Bake until a pointed knife can be inserted with minimal resistance, about 45 minutes. After removing from the oven, allow to settle.

Step - 2

Meanwhile, saute garlic in heated oil for one to two minutes in a large skillet. Cook the tomatoes while stirred in, until heated through.  

Step - 3

Proceed to remove the stringy flesh from the squash using a large spoon. Toss with the vegetables, feta cheese, olives, and basil in the skillet. Keep toasty.
