1 lb ground chicken ▢1 shallot, minced ▢1/2 c panko breadcrumbs ▢1/4 c grated parmesan ▢1/4 c basil pesto fresh or store-bought ▢1 egg ▢1/4 tsp. salt ▢1/4 tsp. black pepper


Step - 1

Preheat the oven to 400 degrees Celsius. Prepare a silicone baking mat and line a baking tray. 

Combine the ground chicken, shallot, breadcrumbs, parmesan, pesto, egg, salt, and pepper in a medium mixing basin. Mix by hand or with a spatula until thoroughly combined.  

Step - 2

Consist of spheres that are approximately 1 1/2 inches in diameter. Place on the baking sheet that has been prepared and delicately coat with oil; pure avocado oil is my preferred choice.    

Step - 3

After 20 to 25 minutes, or until the internal temperature reaches 165 degrees, place in the oven. Serve with steamed vegetables or your preferred pasta dish after removing from the oven.

Spicy and fragrant, homemade pesto chicken meatballs are delicious when served alone or over pasta.
